The winter state of your lilies depends on the type of the lily. Some lilies will keep pads all winter -- Colorata (surprisingly a tropical), Moon Dance, and Joey Tomachek (both hardy lilies).
I don't know of any lilies that will actually bloom in winter. Almost all tropicals and most hardy's go totally dormant and will look like empty pots all winter. Hardy's and most tropicals will come back in spring with no problems, given the depth of the pot in the water and the severity of the winter.
